Q: Where do you source your ingredients?
One of our core values at Grove & Garnish is using fresh, seasonal ingredients whenever possible. This not only ensures the food is at its peak flavor, but also supports local farmers and artisans who are vital to the health of the community. We’ re forming partnerships with them to ensure we’ re sourcing as locally as possible. This helps keep money circulating within our community and strengthens our local food systems.
A great example is our Fall Festival Salad. It combines many flavors people love in the fall: crisp apples from Gene at Kingsbury Orchard, just down the road from us in Dickerson, roasted butternut squash, toasted walnuts paired with goat cheese, and a light cider- Dijon vinaigrette. We top it off with brined grilled chicken and a sprinkling of amaranth, making for a hearty, balanced salad that feels like autumn on a plate. Working directly with local farmers like Gene ensures we know exactly where our food comes from, and we think you can taste the difference in every bite.
Q: Can you talk a little bit about your culinary philosophy and approach to cooking?
One of the key things we are very committed to at Grove & Garnish is minimal processing. In the food industry today, many products are over-processed and loaded with additives and preservatives that strip away the natural flavor and nutrients. At the grocery store people are faced with confusing food labels and conflicting nutrition advice. They struggle to make informed choices about what to eat. We believe in the power of whole foods, so we’ ve created a menu that is free from ultra-processed ingredients.
For cooking oils, we keep it simple: we only use extra virgin olive oil and cold-pressed avocado oil, both known for their health benefits and rich flavors. If we do need to incorporate something pre-prepared, like tofu, we ensure it’ s the highest quality available, and we source organic products whenever possible. We focus on cooking methods like roasting, grilling, and steaming to bring out natural flavors without overwhelming them with heavy sauces or excess oil. The result is food
