Mix the brown sugar , cinnamon and 1 / 4 cup of butter well .
n Honey Glaze
3 Tbsp butter , melted 1 / 3 cup local honey 2-3 cups powdered sugar 1 Tbsp cream or more as needed for thinning
• Once dough has risen , punch it down and let it rest for 5 minutes .
• Divide dough in half . Roll in a rectangle , approximately 1 / 4 ” thick . Spread with half of leftover soft butter , then half of brown sugar filling .
• Roll lengthwise ; cut into 2 ” rolls and place in parchment-lined regular size muffin tins . Repeat with other half .
• Bake at 350 * for 15 minutes until just turning golden on top . Don ’ t be tempted to bake longer as they will continue to bake in pans . Let cool to warm , then pour glaze on tops !
Honey Buns

n Dough
1 cup warm milk ( no more than 105 *) 2-1 / 4 tsp yeast 2 eggs 6 Tbsp melted and cooled butter 1 tsp salt 1 / 2 cup sugar 3-1 / 2 cups all purpose flour
Combine wet ingredients well ; add flour slowly . You want a slightly sticky dough . ( I have never used more than 4 cups of flour , almost always it ’ s 3-1 / 2 .) Knead for 3 minutes . Place in greased bowl in warm place and let rise for an hour or until doubled in size .
n Brown Sugar Filling
1-1 / 2 cups brown sugar 3-1 / 2 Tbsp cinnamon 1 / 2 cup butter divided in half
You can also roll whole dough into a 16 x 20 rectangle to make larger buns and put them in a 9 x 13 pan ( I use stoneware pans ) and drizzle whole pan with glaze , like you would cinnamon buns !!
