GRILLED
AMARETTO FRUIT
Serves: 3-4
Ingredients
• 2 tablespoons coconut oil
• 1/2 cup Amaretto liquor
• 4 tablespoons coconut sugar
• 1 teaspoon vanilla extract
• 2 ripe, sweet peaches, pitted and cut in half
• 4 ripe soft figs, cut in half
Amaretto Sauce
Put the coconut oil, Amaretto, coconut sugar and vanilla
extract into a saucepan and cook on medium heat.
Continually stir the sauce with a wooden spoon for a few
minutes until the sugar has melted into the oil and the sauce
is smooth. Keep stirring and after about 30 seconds turn the
heat down to low so the sauce is slightly bubbling. When the
sauce has thickened enough to pour off a spoon like cream,
and NOT like honey, turn the flame off. Take the pan off of the
heat and allow to cool.

Grilling the Fruit
Spray a griddle pan with oil spray and let the pan warm up.
Once the pan is very hot, put the fruit on. Grill until soft and
warm. Take the pan off off the heat before the fruit becomes
soft or mushy.
Arrange the fruit on a platter. Drizzle the Amaretto sauce over
the fruit.
