Hildegard's Cookies of Joy

3/4 Cup butter or margarine (1 1/2 sticks)

1 Cup dark brown sugar

1 Egg

1 tsp baking powder

1/4 tsp salt

1 1/2 Cup flour

1 tsp cinnamon

1 tsp nutmeg

1/2 tsp ground cloves

Let butter soften and then cream it with the brown sugar. Beat in the egg. Sift the dry ingredients. Add half the dry ingredients and mix. Add the other half and mix thoroughly. Dough may be chilled to make workable. Heat oven to 350*. Form walnut sized balls of dough, place on greased and floured cookie sheet (or use parchment paper). Bake 12- 15 minutes until edges are golden brown. Cool 5 minutes, remove them from cookie sheet and finish cooling on racks. Makes about 30 cookies.

Known as Hildegardplatzchen, these cookies are traditionally eaten in Germany on September 17, the feast of St. Hildegard von Bingen.

Pork Chops

4 lg. Pork Chops

2 lg. onions sliced

1/2 Cup red or white wine

1 tsp soy sauce

Saute onion rings in olive oil until brown. Use an oven proof frying pan.

Add pork chops and brown well on both sides. Sprinkle with salt and pepper. Over this pour wine which has been mixed with the soy sauce. Cover and cook in the oven at 350* for 11/2 hours. Longer if necessary.
