Over the years I have eaten snails, ants, grasshoppers, beetles, frogs, tripe, sea slugs, and squid liver. Borscht, brains, broccoli, bok choy, bratwurst, and Brussels sprouts. At first I may have had trepidations but I will try anything. They all proved delicious. Depending on where I am going, I have to train myself to enjoy the ubiquitous ritual, learn to pace myself or hold my liquor in order to insinuate myself into people’s cafés or homes or companies or trust. Rules of Thumb to peel are very suspect. Avoid milk, even in your coffee. One fallback that you can usually rely on is fried foods. They are cooked at temperatures that will kill most anything. As far as food goes, consider your hands, as well as those of others, your enemy. Never forget that everything and everybody you touch are potential sources of disease. Shaking hands, using bathrooms, petting animals can be unhealthy or deadly. Eating is primal. Food is central to all we do. Photographers can experience culinary adventures wherever they go but do not forsake the experience for the metaphor. Eat. If it is cooked, boiled or peeled, you can eat it.
