Salmon Greek Salad
6 ounce salmon fillet ½ Tbsp olive oil salt and pepper 1 cup arugula or fresh greens of your choice ¼ cup grape tomatoes 4 kalamata olives chopped 2 pepperoncini peppers 2 Tbsp chopped cucumber 2 Tbsp feta cheese crumbles 2 Tbsp low-sugar lemon vinaigrette
1 . Preheat oven to 425 degrees . Rub salmon with olive oil and top with salt and pepper . Place salmon skin side down in glass baking dish coated with non-stick cooking spray and bake for 12-15 minutes .
2 . While salmon is cooling prepare salad . In salad bowl add arugula , tomatoes , olives , pepperoncini peppers , cucumber , and feta cheese .
3 . Top salad with salmon fillet , skin removed . Drizzle salad with dressing .
