Turkey Sausage and Peppers
Penne pasta , cooked 1 tsp olive oil 1 tsp minced garlic 1 link of turkey Kielbasa or Polish sausage , sliced diagonally in ¼-inch slices
1 bag frozen peppers and onion stir-fry mix ( red , yellow , green bell peppers and onions ) 14 ounce can Italian style diced tomatoes ¼ tsp crushed red pepper flakes 2 Tbsp shaved Parmesan cheese ( optional )
1 . Cook pasta according to directions and set aside .
2 . In large skillet heat olive oil over medium high heat . Add garlic and cook for 1 minute . Next add sausage and cook for 3 minutes . Stir in frozen pepper and onion mix and cook for 5 minutes . Stir in tomatoes and red pepper flakes , cover and simmer for 5 minutes .
3 . Serve over pasta or spaghetti squash for a low carb alternative . Garnish with Parmesan cheese , if desired .
