A perfect Winter soup!
I grew up with this soup. My parents always had garlic around and this soup is always a success! You and your guests will love it.
Ingredients:
2 quarts (organic-low sodium) chicken broth
or vegetable broth
25-30 garlic cloves finely chopped
2 large sweet onions thinly sliced
5 organic tomatoes, sliced
(or 2 cans of 28oz)
1/4 cup flour
2 tbsp butter
2 tbsp olive oil
chives, saffron (optional)
salt, pepper
Heat the olive oil and butter in a large soup pot. Add onion and garlic, cook over medium heat for 2-3 minutes. Add the flour slowly and stir. Add the tomatoes, chives, saffron.
Continue to cook for 20 minutes over medium heat.
Add the broth, salt & pepper, reduce the heat and cook for another 15 minutes and… Voilà !
Garnish with parmesan cheese.
