ELDERFLOWER GIN FIZZ
Serves 2
1 ounce lemon juice ½ ounce elderflower cordial 1 ½ ounces gin 1 ounce elderflower liqueur
2 ½ ounces chilled sparkling wine
Sprig of lemon thyme or a mint leaf, for garnish
Pour the lemon juice, elderflower cordial, gin and elderflower liqueur into a cocktail shaker. Add a large handful of ice and shake until the outside of the shaker feels icy cold.
Strain the cocktail into two champagne flutes or coupes, then top up slowly with sparkling wine. Garnish each one with a small sprig of lemon thyme or a mint leaf.
