THE BEST STRAWBERRY CAKE
Serves 8 to 10
For the compote :
1 pound strawberries , hulled and halved
2 tablespoons granulated sugar Juice from half a lemon
1 ½ teaspoons baking powder ½ teaspoon baking soda 1 teaspoon kosher salt ½ cup ( 1 stick ) butter , softened 1 cup granulated sugar 2 large eggs
For the cake :
Cooking spray 2 cups all-purpose flour 3 tablespoons cornstarch
¾ cup strawberry compote 1 teaspoon pure vanilla extract ¾ cup milk Pink food coloring ( optional )
