Makes 1 cocktail
1 ounce gin ½ ounce fresh lemon juice ½ ounce simple syrup ( see box for recipe ) Ice 4 ounces brut Champagne , chilled
In a cocktail shaker , combine the gin , lemon juice and simple syrup . Fill the shaker with ice and shake well . Strain into a chilled flute and top with the Champagne .
BASIC SIMPLE SYRUP 1 cup sugar 1 cup water
In a small saucepan , combine the sugar and water and bring to a boil . Simmer the mixture over moderate heat until the sugar dissolves .
NOTE : The syrup can be refrigerated for up to 3 weeks .
