HONEY DIJON AND GARLIC SALMON
Serves 4
1 ½ pounds fresh salmon( cleaned and cut into four pieces)
4 cloves garlic, minced
3 tablespoons fresh parsley, finely chopped
3 tablespoons honey Dijon mustard Juice of half a lemon Pinch of salt ⅛ cup olive oil
Preheat oven to 425 degrees. Line a large baking sheet with foil. Place salmon pieces on top of the foil and set aside.
In a medium bowl, whisk together garlic, parsley, mustard, lemon juice, salt, and olive oil. Whisk until wellcombined. Using a pastry brush, brush the sauce onto the salmon pieces.
Bake uncovered for 15 – 20 minutes Depending on how thick your salmon pieces are, you may need to reduce or increase the time by 2 – 3 minutes( you can use a meat thermometer to check for internal temperature of 140 – 150 degrees).
