Celebration Chicken Salad

4 cups poached chicken 1 cup mayonnaise 1 small onion, diced 1 cup celery, diced 2 cups red seedless grapes, sliced ½ teaspoon cinnamon Salt and pepper, to taste
Shred the chicken( or for a smoother texture, use a food processor). Mix remaining ingredients together. Add salt and pepper to taste. Combine with the chicken until evenly mixed.
RUTH’ S PRO TIP: This recipe can be altered slightly to make a yummy curried chicken salad. Simply subtract the onion, celery and cinnamon and add one healthy tablespoon of curry powder( or more to taste). Finish with a few tablespoons of sliced, toasted almonds.
