Arugula, Bacon, Avocado & Pistachio Salad

4 strips thick-sliced bacon, diced 2 cups red grapes, halved 1 bag of arugula 1 avocado, diced ¼ cup roasted salted pistachios
For the vinaigrette:
¼ cup rice vinegar 3 tablespoons olive oil 1 tablespoon minced shallots 1 teaspoon honey 1 teaspoon Dijon mustard Salt and pepper, to taste
Combine the grapes and arugula in a large bowl.
Mix vinaigrette ingredients together. Pour the vinaigrette over the grapes and arugula, and toss.
Garnish with avocado, bacon and pistachios.
