SPICY TOMATO MARINATED FETA
½ cup olive oil , plus more as needed 2 garlic cloves , thinly sliced
2 small-ish or one large ripe tomato , coarsely chopped , or pint of cherry tomatoes , halved
Kosher salt and freshly ground black pepper
2 tablespoons harissa paste 1 tablespoon white vinegar
8 ounces feta cheese , sliced into ¼-inch slabs , or ½-inch cubes
Heat olive oil in a pan over medium heat . Add sliced garlic cloves and sauté until light golden yellow , roughly two to three minutes . Add tomatoes and cook , stirring occasionally , until they have broken down into a thick , chunky sauce , about six to seven minutes . Stir in harissa paste and continue to cook for a three or four more minutes .
Remove pan from heat and add a tablespoon of white vinegar . Season with salt and pepper , to taste . Add more olive oil if needed to achieve a spoonable consistency .
To serve , place the feta in a serving dish or bowl and pour the tomato mixture over . Let sit for at least 10 minutes before serving .
