For the Mascarpone Mousse :
4 egg yolks ½ cup granulated sugar
8 ounces mascarpone cheese , softened at room temperature for 15 – 20 minutes
1½ cups whipping cream 4 egg whites
Add egg yolks and sugar to a bowl and whip over a double boiler ( a glass bowl over a pot of simmering water ) until light and fluffy and reaches 165 °.
The mixture will increase in volume . Remove from heat and continue whipping to help it cool . The mixture will be thick . Allow to cool briefly and
