Beets are a colorful addition, and my children always ask for seconds of this broccoli. BEETS WITH VINAIGRETTE 1½ pounds quartered peeled beets 2 tablespoons sliced shallots Tamberlyn’s wish list 1. 2. Versatile Platter, Cheese Stone Waylande Gregory Leopard Tray in Green 3. Mark and Graham Suede Boho Bag 1½ tablespoons red wine vinegar 1 tablespoon olive oil ½ teaspoon Dijon mustard Freshly ground pepper Salt Place beets in cold water and bring to a boil. Simmer until tender, approximately 30 minutes depending on size of beets. Peel and cut into quarters. Combine shallots and remaining ingredients and mix well.
