Rolf and Daughters
To continue our culinary journey, we
headed to Rolf and Daughters, a bustling, cozy spot in Germantown. Chef
Philip Krajeck is a pasta connoisseur.
His squid ink chitarra, served with
clams, calabrian chili and sourdough
bread, is divine. The drinks are almost
as destination-worthy as the food. You
do not need a reservation for the large
communal table that runs the length
of the restaurant; expect a wait, but it
is definitely worth it.
Philip Krajeck
Having spent a large portion of his life
in Europe, Philip Krajeck’s cooking
influences come from staff meals prepared at his culinary/hotel school in
Switzerland where he was introduced
to rustic Italian family-style dining. He
brought that style of cooking back to
the US and worked in several different kitchens, ranging from a seafoodfocused restaurant in Florida to a
French restaurant in Atlanta.
After many years conceptualizing the
restaurant, Rolf and Daughters opened
in 2012. Rolf and Daughters takes the
Italian influences of Philip’s earlier
years and adds his knowledge and skill
set developed over the years. The result
is a place that is fun, delicious and even
a bit rowdy at times. On a typical night,
you will hear hip hop music while
guests pass around wooden boards with
chicken liver pâté and bowls of pasta. It’s
a fun environment that is all about the
food—patrons are encouraged to have
a great time, enjoy the food and drinks
and leave full and happy!
