BAKED FIGS WITH GOAT CHEESE
Serves 6( 2 figs per person)
This recipe is easy to adapt with whatever ingredients you prefer or have on hand.
Substitute the goat cheese with ricotta, parmesan, mozzarella or blue cheeses like Stilton or Gorgonzola. Add capers or olives to highlight the sweet taste of the figs and add an extra savory note. Try using almonds, pistachios or pecans instead of the walnuts. The possibilities are almost endless!
12 medium-sized figs 6 ounces soft goat cheese ¼ cup chopped walnuts 2 tablespoons chopped sage ¼ cup honey
Salt and freshly ground black pepper, to taste
Preheat the oven to 390 degrees. Cut the stems off the figs and make an“ X” cut in the top of each, about halfway through.
Stuff the figs with soft goat cheese using a teaspoon. Sprinkle some chopped walnuts and sage over your stuffed figs and drizzle them with honey. Add salt and freshly ground black pepper, to taste.
Broil for about 5 minutes or until they look soft and release juice. Serve warm or cold.
