FISH CRUDO
Serves 4
8 ounces fresh white fish ( rockling , hake , bream , etc .), single piece , ideally even in shape
2 tablespoons lemon juice
1 tablespoon extra-virgin olive oil or a little more , to taste
2 teaspoons lemon zest ¼ teaspoon flaked sea salt 4 mint leaves 2 teaspoons microgreens , for garnish
Place the wrapped fish in the freezer for approximately 10 minutes to help it firm up .
With a sharp knife , thinly slice the fish and place on four plates with the slices slightly overlapping each other .
Drizzle fish with lemon juice and olive oil . Grate lemon zest evenly over the top and then top with either small mint leaves or torn pieces of larger leaves . Garnish with a few microgreens and serve .
