On the Trail of Tacos:
A Taco Turismo Update

ne of the myths that permeates Peace Corps Macedonia is that quality Mexican food is like a unicorn: its
presence rumored and hoped for, but its existence never proven. I have always been a reverent believer
in the fabled unicorn and so it was with this spirit of belief that Matt Tschabold and I sought out to prove the
existence of fine Mexican dining in Macedonia.
The Tako Turisma avtobus has made two stops and in this Edition of Pauza, we are proud to present to
you a summary of our epic journey thus far.
Our first stop was in the lovely hamlet of Stip where we were greeted by Chuck “The General” Tinkler
and his team: Vince, Mike and Jordan. I never thought I would confuse Stip with heaven, but during that meal
it was a close call. Under ”The General’s” guidance, this team of men crafted a meal with a variety of flavors
and textures that left me lamenting my lack of a Siamese twin attached at the stomach so I couldn’t eat more.
The fire of competition burned bright all the way to Tetovo and led us to the home of the Molloys.
While Conor whipped up Mexican seasoning from pazaar spices, Kacey provided us with running commentary
rife with subliminal messages: “I wouldn’t want to break one of these delicious homemade tortillas that we
didn’t buy from Vero,” she mused before quickly adding, “even though we totally could have.” Using pazaar
materials and a little Montana love, the Molloy’s had the judges bound in a cruel cycle of sweating and crying
due to the spiciness yet unable to stop eating due to the deliciousness.

Ingredients:
2 cups bulgar
2 cups hot water
1 cucumber (chopped)
2 tomatoes (chopped)
1 bunch green onions (chopped)
1/2 cup mint (chopped)
2 cups parsley (chopped)
1 clove garlic (optional)
Directions:
Soak bulgar in hot water until the water is absorbed
Add all other ingredients and mix. Use fresh parsley when possible and if m int is not available I use a tea bag!
Add the following:
1/2 cup lemon juice
3/4 cup olive oil (or less....)
Salt and pepper to taste
Chill and serve
Note: you can substitute whole grain wheat (wheat berries) for the bulgar - known as ??????? but you will have to cook it until
soft before using.
