Page 27 Recipe: Any Fruit Coffee Cake By: Lucianne Phillips 4 cups chopped fruit (apples, apricots, peaches, pineapple, whole blueberries or plums) 1 cup water 2 T lemon juice 1-1/4 cups sugar 1/3 cup cornstarch (if you can't find cornstarch, you can also use flour for thickening) 3 cups flour 1 cup sugar 1 TBSP baking powder 1 TSP salt 1 TSP ground cinnamon 1/4 TSP ground mace (or nutmeg) 1 cup butter or margarine (= 2 sticks of butter = 1 package of 250 grams butter) 2 slightly beaten eggs 1 cup milk 1 TSP vanilla 1/2 cup sugar 1/4 cup butter or margarine (=1/2 stick of butter = 1/4 package of 250 grams butter) 1/2 cup chopped walnuts Preheat oven to 350 degrees F or 175 degrees C Grease a 13x9x2 inch baking pan or two 8x8x2 inch pans In a saucepan combine choice of fruit and the water. Simmer covered about 5 minutes or till fruit is tender. Stir in lemon juice. Mix 1-1/4 cups sugar and cornstarch; stir into fruit mixture. Cook and stir till thickened and bubbly. Cool ALTERNATIVE TO THE ABOVE: USE ANY FRUIT JAM FROM THE MARKET In a mixing bowl, stir together 3 cups flour, 1 cup sugar, baking powder, salt, cinnamon and mace. Cut in the 1 cup butter (use 2 knives and slice them in opposite directions) till the mixture resem bles fine crumbs. Combine eggs, milk and vanilla. Add to flour mixture, mixing until blended. Spread half of the batter in the greased pan. Spread the cooled fruit mixture over the batter. Spoon the remaining batter in small mounds over the fruit mixture, spreading out as much as possible. Combine the 1/2 cup sugar and 1/2 cup flour; cut in the 1/4 cup butter till the mixture resembles fine crumbs. Stir in the nuts. Sprinkle the nut mixture over batter in pan. Bake at 350F (175C) for 45-50 minutes until cake tests done (toothpick or knife inserted comes out clean and dry). It can take longer, depending on the oven. Suggestions: The topping tends to expand and drip. Put a cookie sheet covered with foil under the baking pan for easier clean up. Also, the pan will be easier to clean if you soak it in water.
