ocated on the Oeste Ranch
Golf Course (formerly
Crown Valley Golf Course)
north of Willow Park, you will
find Los Vaqueros West restaurant.
The moment we turned onto
the driveway we were amazed
by the beautiful, tranquil setting.
We walked towards the whitestone building and entered
through the salient wrought-ironand-glass entry door. We entered
into a spacious dining area with
a multitude of tables, booths,
vaulted ceilings, tile floors and
floor-to-ceiling windows that
reveal a spectacular view of the
golf course that will floor you.
To start our meal, my companion and I had chips and salsa.
We also ordered a cup of queso
sauce from the prompt and attentive staff. The salsa comes in a
tall jar with two serving bowls
so you can pour your desired
amount into the dipping bowl
and add some if required. The
queso arrived with a lovely presentation and tasted handmade
and fresh, definitely not from a
can or a jar.
My companion ordered the
Brisket Tacos, slow-smoked
brisket, served in your choice of
flour or corn tortillas, garnished
with feta cheese, cilantro, avocado wedges and served with
Spanish rice, charro beans with
a side of pico de gallo. I chose
the Chicken a la Parrilla Salad
that consisted of tender chicken
104
breast served on a bed of field
greens, topped with hominy relish, fresh cilantro and a drizzle of
"light" chipotle lime dressing.
I excused myself from the table
for a moment to sneak a peek into
the kitchen and was happy and
impressed to see how spotless and
well-organized it was.
The entrees were delivered to
our table quickly with a pleasing,
artful presentation that was also
inviting. But, the flavor was even
better than the presentation. We
were able to taste every ingredient,
thanks to the freshness and the fact
that all ingredients complemented
each other very well.
Los Vaqueros West is the third
of three locations for Johnny
Cisneros, Jr. and his wife, Kiki.
The couple met while both were
working at El Chico in Fort Worth.
Rumor has it that it was love at
first sight.
They dated for a short time before marrying.
Early on, they shared a common
dream that they would one day
own their own restaurant.
They both continued to work
in restaurants after they married
and long after their two sons were
born. The boys, Johnny, Jr. and
Michael, were close in age — 13
months apart. Johnny and Kiki
