P.A.R.C. Mag: What is your favorite event to cater and why?

"I enjoy any event that brings people together for fun but I think the best events are weddings/showers (bridal or baby) because it’s all about love!"

P.A.R.C. Mag: Where do you get inspiration for creating some of your whimsical designs and color combinations for some of your cakes?

Alexis: "Most often it is something that was requested by the customer but when I get the chance to take the lead, I find that there is inspiration everywhere. Nature, fabrics or something cool I’ve seen on the internet."

P.A.R.C. Mag: What challenges would you say that you have had with filling orders or dealing with indecisive customers? How do you help them to get exactly what they want or envision?

Alexis: "One of the challenges I have come across is in regards to budget. Sometimes a customer has an idea in mind but their budget isn’t in line with the amount of work that it requires. In those instances, I recommend scaling down a size or alternative decorations. Maybe buttercream flowers/decorations in place of fondant or gum-paste. When the customer has multiple ideas I try to work with them to create a design or theme that encompasses their full vision. I may draw something up or Google images to give a visual."

P.A.R.C. Mag: Do you do all of the baking yourself or do you have assistance?

Alexis: "I do most of the baking, my husband will help me sometimes when I make the gourmet cookies but all of the decorating and other baking I do on my own."

P.A.R.C. Mag: What would you say to anyone out there that has an interest in baking or getting established?

Alexis: "I’d say GO FOR IT! Practice and learn as much as you can. It’s always worth doing what you enjoy."

P.A.R.C. Mag: Where do you see Fat Baby Cakes Confection in the next

five years?

Alexis: "I’m currently a home based bakery but it would be great to have a small shop to work out of in the future. I’d definitely like to see a Fat Baby Cakes location in the next 5 years."
