SPAGHETTI WITH ZUCCHINI
• 8 ounces of spaghetti
• 4 fresh zucchinis
• 1 / 2 cup of olive oil
• 1 cup grated parmesan cheese
• Salt and freshly ground black pepper
• 1 / 4 cup fresh basil , torn
LEMON HONEY MAYONNAISE
Bring water to a boil and season with salt . Add pasta and cook to al dente . Drain and reserve 1 / 2 to 1 cup of pasta cooking water . Cut the ends off the zucchinis and thinly slice into circles . In a large saucepan heat olive oil over high heat until hot . Reduce heat to medium and add the zucchini , salt and pepper . Saute until very soft , stirring often . Add pasta to the zucchini in the saucepan . Turn off heat and stir in the cheese . Add just enough pasta water to create a creamy consistency to the sauce . Garnish with basil and serve .
This is delicious as a dipping sauce for fried fish or battered vegetables . Also , a thick and creamy dressing for salads .
• 1 cup mayonnaise
• 1 medium lemon , juice and zest
• 1 Tbs honey
• 1 Tbs sweet Asian chill sauce
Stir together all ingredients until smooth and creamy .
BEER BATTER
This batter is light and crispy because of the bubbles in the beer . For best results , be ready to fry as soon as you mix the batter .
• 1 cup flour
• 1 tsp baking powder
• 1 ( 12 oz ) can IPA beer
Bring oil to frying temperature and prep whatever it is you are frying . In a bowl , whisk together the flour and baking powder . Whisk in the beer and immediately begin dipping your ingredients in the batter . Fry until golden .
