coffee beans , and took their leap of faith . They left behind their family , friends and secure jobs to sign a lease with an option to buy a donut shop in Palestine . The agreement did not work out for them , as the one-year lease turned into five and the shop was never sold to the couple .
“ We spent five years in Palestine , introducing our products and building our customer base , and we were determined to stay in Palestine ,” Sath said . “ However , there wasn ’ t any available opportunity for us , so we opened a shop in 2012 in Grapeland . We later opened another shop in new Summerfield , but we live in Palestine , and we never gave up seeking an opportunity here in town .”
The search took nearly three years , but Sath and Touk were finally able to open Jocelyn ’ s in 2015 .
“ We opened the shop without any announcement .
There was no advertisement , no Facebook posts ,” Sath said . “ People would stop by because they recognized our vehicle , and the day we officially opened , so many people came to support us , and we sold out !”
The support and love for Jocelyn ’ s continues more than a decade later , and for good reason . The shop offers a wide variety of donuts , pastries , gourmet coffee and lots of savory breakfast options . And the hits keep coming .
“ You know , it took me an entire 150-pound bag of flour to find the perfect recipe for our muffins ,” Sath said . “ Fifteen years ago , we didn ’ t have YouTube or Facebook so I couldn ’ t just go online to find things . Now I spend all my free time on social media looking for new ideas for new products . I ’ m not afraid to try anything . Every time I put something new out , it sells out quickly !”
Jocelyn ’ s can definitely satisfy a sweet tooth or the most voracious of breakfast cravings , but they haven ’ t left out those who need a healthier alternative .
