Ching’ s journey started in her kitchen, baking for her children, but it was the influence of her late sister-in-law, Carlene Mendiola, that truly ignited her passion for baking. Together, they spent countless late nights baking and dreaming of one day opening a bakery. Even after Carlene passed away, her spirit and dream continued to guide Ching.
In March 2023, to honor Carlene’ s memory, Ching opened a small“ Backyard Bakery” at Carlene’ s home. But it was on Sept. 6, 2023, Carlene’ s 51st heavenly birthday, that Ching Bakes officially became a fully licensed business. That moment was more than just a milestone— it was a sign that Carlene was with Ching every step of the way, guiding her through the challenges and victories of starting her dream.
Taking the Leap – From Comfort to Courage
In 2024, Ching made the brave decision to leave her steady 8-5 job and pursue Ching Bakes full-time.“ It was terrifying, but I knew I couldn’ t ignore my passion anymore,” she says. The leap was fueled by the desire to honor Carlene and give her family a better future.
The decision paid off when Mini Banana Bread, one of her signature creations, became an instant hit at Circle K locations across Guam. What started as a simple treat has quickly become a best-seller, beloved by customers who pair it with their morning coffee.
Overcoming Challenges with Heart
The road to success wasn’ t always easy. Ching faced financial strain, learning how to navigate business decisions, and balancing family life with work. But with every obstacle, Ching found strength in her love for baking

and the unwavering support of her family.
Ching’ s journey in understanding her business process began with GUMA, where she enrolled in their 16-week program to get a solid grasp on running a business. It was during this program that Ching was introduced to the Small Business Development Center( SBDC), where Jarneec Halsey, an SBDC business advisor, led the training and opened doors to invaluable resources.
Jarneec’ s guidance helped Ching understand the importance of financial planning and management, and it was through SBDC’ s one-on-one counseling sessions that Ching gained clarity in these areas.“ The SBDC’ s support was a game-changer for me,” Ching says.“ Through their guidance, I was able to feel more confident in making business decisions, and they really helped me understand how to plan and manage finances better.”
To fund her bakery, Ching’ s husband, her Chili’ Guagua, understood the value of her dream and believed in it. So they took a leap and financed their dream.“ It was a huge sacrifice, but we believed in this dream,” she says.
Triumphs to Remember
One of the most emotional moments in Ching’ s journey came when Ching Bakes officially received its business license. The day was deeply significant— not only because it marked a new chapter for the business but because it was on Carlene’ s birthday.“ That day felt like Carlene was right there with me, guiding me,” Ching says, her voice filled with emotion.“ It was a sign that she was with me every step of the way.”
Another victory came when Mini Banana Bread became a top-seller at Circle K, solidifying Ching Bakes as a trusted supplier. It was proof that Ching’ s hard work, love, and dedication were paying off.
Looking Ahead – Big Dreams and Big Hearts
Ching’ s vision for Ching Bakes extends far beyond the present. In the short-term, Ching aims to build wholesale relationships with local cafes, restaurants, and retail stores, while developing systems to efficiently manage production and delivery.
Long-term, she envisions Ching Bakes as the leading

wholesale bakery in Guam and the Marianas, all while staying connected to the community that has supported her from the beginning.“ I want to grow, but I never want to lose that personal touch,” she says.
Her plans include expanding the product line to meet seasonal trends and evolving customer needs, but the heart of the business will always be about quality and love.“ Every treat we make has a story,” she says.“ I want people to taste not just our food but the love that goes into each bite.”
