Set off on a walking tour of San Cristobal de la Laguna — a UNESCO World Heritage Site . Then we ’ ll head to Garachico Harbor , its modern port a striking contrast to the nearby historic Old Town .

DAY 11 • La Palma • Santa Cruz de la Palma Stroll Santa Cruz de La Palma , the capital city of the island of La Palma , and admire its famous centuriesold architecture and lively port . Then , sit down with a local guide who will explain to us how the most recent volcanic eruptions have altered the islands ’ geology .

On Day 12 , visit a family-owned banana plantation and learn about the cultivation and history of banana production in the Canary Islands .

Visit a family-owned banana plantation , followed by a visit to Cenobio de Valerón , an archaeological cave site in Gran Canaria . Then , enjoy a Home-Hosted Lunch before returning to our ship .

DAY 13 • Visit a cochineal farm • Explore Las Palmas de Gran Canaria
Learn about the Canary Islands ’ rich tradition of cochineal production . At a local farm , you ’ ll see how these parasitic insects that live on cacti and are bred and harvested to extract carmine , a natural reddish dye used in cosmetics , food , textiles for centuries . Later , enjoy a panoramic tour of Las Palmas de San Canaria including a walking tour of its Old Town .

DAY 14 • At sea Sit back and enjoy another day at sea , as we bid Spain ’ s Canary Islands adios and head toward our first stop in northwest Africa — Morocco .

Board 4x4 vehicles and head to Dakhla ’ s dazzling White Dune this morning . After lunch , we ’ ll visit with some local Moroccan families for tea . Later , we ’ ll visit a local market .
