Simple Roast Beef with Root Vegetables

Peel root vegetables, cut into ½ inch chunks, move to a mixing bowl. Drizzle with olive oil, add 1 Tbsp of rosemary, 1 tsp salt and pepper. Evenly coat all vegetables and cover with plastic wrap. (don’t chill) Preheat oven to 450.
Combine ¼ cup olive oil, garlic, salt, pepper, 1 Tbsp rosemary and thyme. Cover entire roast with seasonings move to roasting rack. Place pan on middle rack of oven. Roast for 15 min, reduce heat to 325 and roast 45 min more. After 45 min, remove roast, add vegetables around the side and continue cooking for 1 additional hour.
Vegetables will be done when easily pierced with a fork. When done, remove roast from the oven and rest for 30 min on a cutting board. Resting is critical to prevent dryness. Cut only the number of slices needed for the meal. Cut against the grain to maintain retain moisture. Serve with horseradish sauce.
SLICING AND SERVING
Be sure the meat has had time to rest. If you cut it right away, all those flavorful juices will end up on the cutting board and your meat will be dry and grainy. When it's time, make sure to use your sharpest carving knife or chef's knife to get nice even slices. Cut only the number of slices needed for the meal. This helps to keep leftover portions juicy. Always cut against the grain to maintain tenderness with ¼ inch slices to retain moisture. Serve with root vegetables, and horseradish sauce.
One 4-pound round roast (trimmed
by a butcher
3 pounds of root vegetables-
carrots, parsnips, sweet potatoes,
beets
Extra-virgin olive oil
3 cloves of garlic, minced
2 tablespoons of fresh chopped rosemary
1 tablespoon of chopped fresh
thyme leaves
2 teaspoons of Kosher salt
1 teaspoon of freshly ground
black pepper
