Orange Ginger Salmon

Ingredients:

Four medium carrots, sliced 1/8 inch thick crosswise

One medium green or red bell pepper, cut

into 1-inch pieces

2 cups shredded spinach

1 1/2 tablespoons olive oil, divided

3 tablespoons orange juice

1 tablespoon honey

2 teaspoons chili powder

1 teaspoon ginger grated

4 cloves garlic finely chopped

4 salmon fillets 4 ounces each

Directions:

Preheat oven to 400

In a large bowl, toss carrots, bell pepper, spinach, 1 tablespoon of oil.

In a small bowl, whisk orange juice, honey, chili powder, garlic and ginger with remaining half tablespoon of oil

Place vegetables in a casserole dish and top with salmon, pour orange juice mixture over the top

Place cover on the casserole dish

Bake for 20 minutes or until top internal temperature of salmon reaches 145° and vegetables are tender
