Mushroom & Bean Stew

Ingredients Method
3 tbsp. olive oil
1½ pounds cremini mushrooms, roughly chopped
1 large onion, finely chopped 2 tbsp. all-purpose flour
2 tbsp. mild curry paste( see Cook’ s Tip)
⅔ cup dry white wine 1( 400g) can of diced tomatoes 2 tbsp. sun-dried tomato paste
4 cups canned mixed beans( such as kidney beans, pinto beans and chickpeas), drained and rinsed
3 tbsp. mango chutney
3 tbsp. freshly chopped cilantro and mint

Heat the oil in a large saucepan over low heat. Sauté the mushrooms and onions until the onion is soft and browned. Stir in the flour and curry paste and cook for 1-2 minutes. Add the wine, tomatoes, sun-dried tomato paste and beans and bring to the boil, then reduce the heat and simmer gently for 30 minutes or until most of the liquid has reduced. Stir in the chutney and herbs before serving.
Cook’ s Tip:
Check the ingredients in the curry paste; some brands may not be suitable for vegetarians.

Pineapple Fried Rice

4 cups cooked rice( I used a mixture of wild rice and brown rice)
½ red capsicum, chopped finely 1 brown onion, chopped finely ½ carrot, chopped finely
1 ½ cups chopped fresh or canned pineapple
½ red chilli, chopped
3 tbsp. of soy sauce( I used 1 as light soy sauce to dilute it because dark soy is a little too salty for my taste)
2 tbsp. minced garlic ½ tsp. of ginger 1 tsp. of sesame oil 1 tsp. curry powder
Chopped spring onion & shaved or desiccated coconut to serve

Heat a pan on low medium with some sunflower oil and add garlic and ginger. Once this starts sizzling add onion, capsicum, chilli and carrot and cook these on medium for about 3 minutes. Add curry powder and constantly mix( you don’ t want it burning) for about 30 seconds then add pineapple, soy sauce and sesame oil and mix this around for another 30 seconds-1 minute until the pineapple is well mixed in and smelling fragrant. Now add the rice and turn down the heat to low to allow the rice to soak up all the flavours. Serve with coconut and spring onions.
