Zucchini Noodles

Ingredients Method
Noodles 2 spiralised zucchini 1 spiralised carrot A handful of cherry tomatoes Half a bag of spinach A squeeze of lemon 1 avocado A handful of goji berries 200g of fermented cabbage Sauce 1 ½ tbsp. of tahini 2 tsp. of tamari sauce Kale Pesto 200g of Kale A pinch of basil 1 clove of crushed garlic 1 tbsp. of olive oil A handful of pine nuts

Sauce Blend pesto ingredients together in blender until desired consistency. Stir together with tahini and tamari sauce in a bowl and leave until noodles are completed. Noodles Independently spiralise your zucchini and carrots using a spiraliser. Peel avocado, de-seed and smash it with a fork until a soft consistency. Now add all ingredients into a large bowl together and stir until well mixed. Finally pour sauce into bowl and mix thoroughly until ready to serve. Happy healthy eating!
