Ingredients Method
1 tbsp. canola oil 1 brown onion, finely chopped 1 clove garlic, finely chopped 4 ripe tomatoes, finely chopped 3 cooked and rinsed chickpeas 1 vegetable stock cube 3 tbsp. Rogan Josh curry paste 1 tbsp. tomato paste 3 fresh kaffir lime leaves Salt to taste Juice of 1 lime 300g baby spinach
Steamed basmati rice( approx. ½ cup per person)

Place oil in a deep frying pan. Add onion, sauté till translucent. Add garlic and sauté for 1 minute. Add tomato and chickpeas, stirring for 1 minute. Add stock cube, curry and tomato paste and stir well. Add kaffir lime leaves, a generous pinch of salt, lime juice and spinach. Stir well, reduce heat, place lid on frying pan and simmer gently for 15 minutes. Place basmati rice on serving plates, sprinkle with coriander and serve each plate with lime.
Clean Moroccan Zucchini Fritters

3 zucchini, grated 1 zucchini, chopped 6 eggs 2 tsp. Moroccan spice 1 tsp. pepper 1 tsp. salt ¼ cup parmesan cheese Handful chopped basil Handful dill 1 ½ cups coconut flour Olive oil for frying

In a large mixing bowl, whisk eggs until smooth. Add in the grated zucchini then chopped zucchini and combine. Add in salt, pepper and the Moroccan spice. Combine. Add in the basil, dill and parmesan cheese and mix. Add in the coconut flour in small amounts, mixing thoroughly to ensure there are no lumps. Heat olive oil in pan on medium heat. Gently drop a spoonful of butter into the frying pan, cook for about 4 minutes on each side( until golden on each side and skewer / fork comes clean when inserted). Lay cooked fritters on paper towel. Mix together the yoghurt, garlic and dill until a smooth consistency. Serve with fritters. Enjoy! Can be sliced and tossed into salads, chopped and included in a healthy burrito or wrap with some lettuce, onions, tomato and of course a healthy and delicious dressing!
These can be frozen up to 3 weeks( airtight container with paper towel or wrapped in foil) and enjoyed as desired, especially as a quick and healthy lunch alternative!
