Sweet Potato, Zucchini & Feta Mini Muffins

Ingredients Method
1 medium sweet potato, grated 1 medium zucchini, grated 1 medium red onion, grated ½ cup cheese, grated 100g feta, crumbled ⅓ cup spelt or wholemeal flour 4 eggs

Combine all ingredients and spoon into mini muffin tray( use silicon trays to stop muffins sticking). Bake at 180 degrees for 15 minutes.

Orange Zesty Coleslaw

3 cups shredded cabbage
1 large orange segmented and chopped
Orange rind 2 spring onions chopped 1 green capsicum chopped 1 red capsicum chopped Small grated carrot Small handful of walnuts Dressing ¼ cup low-fat natural yoghurt ¼ cup reduced-fat mayo Juice of 1 lemon
1 tsp. wholegrain or French mustard

To make dressing, combine all ingredients and mix well. Place all ingredients into a bowl and mix with dressing.
