Lentil & Vegetable Cottage Pie

This is an excellent recipe to cook for dinner and then take the leftovers to work to eat in your break. Taken from Taste. com
Ingredients Method
1 tbsp. vegetable oil 1 onion, finely chopped 2 celery stalks, chopped 1 large carrot, chopped 2 garlic cloves, crushed 2 tbsp. sundried tomato pesto
1 cup tomato passata( sieved tomatoes)
1 bay leaf 1 tbsp. chopped thyme 1 cup vegetable stock
400g can of lentils, rinsed and drained
800g potatoes, peeled and chopped
100g unsalted butter ½ cup milk 2 egg yolks 100g grated cheddar

Preheat the oven to 200 degrees. In a large pan, heat oil over medium heat and cook onion for 1-2 minutes. Add celery, carrot and garlic and cook for 1 minute. Add pesto, passata, bay, thyme and stock. Simmer gently for 15 minutes until vegetables are cooked. Stir in lentils and season, then transfer to a 1.2-litre baking dish. Meanwhile, cook potatoes in boiling salted water until tender. Drain and mash. Stir in butter, milk, yolks and cheese. Spread over lentil mixture and roughen top with a fork. Bake for 15 minutes or until bubbling and golden.

Coconut Flat Bread( Roti)

Ingredients
2 cups plain flour
1 cup freshly grated coconut / frozen coconut
Small carrot Small zucchini Small onion ¾ cup water or as needed 1 tbsp. salt
Method
1 Grate the carrot, zucchini & onion finely. 2 Place the flour, grated coconut, grated carrot, grated zucchini, grated onion, salt and water in a medium bowl. 3 Using one hand thoroughly knead the dough for about 5-7 minutes. Using up all the loose flour to form smooth dough. 4 Shape the dough into a ball. 5 Place a large cast-iron skillet or taw over medium heat. 6 Separate the dough into 8 equal pieces. 7 Grease each ball with a little oil to prevent sticking and so the rolling pin can move freely. 8 Roll them out into 12cm circles. 9 Place the bread in the pan and cook for 1 minute or until you see the brown spots on the surface. 10 Turn the bread over and continue cooking for another 2 minutes. Ensure the bread is well cooked.
