Eggs Baked in Avocado with Bacon

I wanted to share one of my favourite go-to healthy recipes that is perfect for families and a great recipe to get your kids involved when cooking. Make two and freeze one for later or store in portion sizes for lunches. It is full of protein, vegetables and healthy carbs. It’ s also gluten free, grain free and dairy free. I would recommend buying organic vegetables as well.
Ingredients Method
4 rashers of bacon 1 ripe avocado 2 eggs Salt and pepper
1 red chilli, finely sliced – remove the seeds if you don’ t like it spicy

Preheat your grill top or oven to maximum, then lay the bacon on the grill pan or a baking tray and slide underneath. Grill for 3 minutes on each side for crispy bacon. Meanwhile, cut your avocado in half; remove the seed and scoop out a generous tablespoon from each half to create a hole big enough for the egg. Tip: don’ t waste the left over avocado, use it to make guacamole instead! Crack an egg into each avocado half, season with a little salt and pepper, and place on a microwaveable plate. Cook the eggs 30-second at a time for 2 minutes, this should ensure firm whites, but runny yolks. Serve up the baked eggs and avocado with the bacon and a scattering of chilli.
Tip: To stop the avocados rocking on the plate, slice off a little bit underneath to make a flat base.
