Healthy Chicken Curry

Ingredients Method
½ kg mini chicken drum sticks 2 large onions , chopped Cholesterol free butter Salt and pepper 1 tomato

In a frying pan , heat butter , add onions and cook for 5 minutes . Add 5 pinches of salt and 2 pinches of pepper . When onion becomes transparent put chicken in and cover the pan for 10 minutes . When chicken becomes off white , put in tomato , leave for 5-6 minutes and stir . Leave on low heat for 15 minutes and stir a couple of times . Serve with rice or bread .

Spanish Turkey Hot Dish Dinner

Ingredients Method
500g ground turkey meat 1 cup chopped onion 2 garlic cloves , minced
400g can of no added salt whole tomatoes , chopped
Small can diced green chillies , drained
⅓ cup raisins ½ tsp . salt ½ tsp . pepper ½ tsp . cinnamon ¼ tsp . cloves ¼ tsp . allspice ¼ tsp . nutmeg ¼ tsp . orange rind ½ tsp . hot sauce
1 cup canned black beans , rinsed and drained
2 cups finely chopped apples 3 cups cooked brown rice

Cook turkey meat over medium heat until golden , stirring to crumble . Drain any juices and pat dry with paper towels and set aside . Wipe fats from pan and coat with cooking spray ; place over medium heat until hot . Add onion and garlic ; sauté 2 minutes or until tender . Return turkey meat to pan . Add tomatoes , green chillies , raisins , salt , pepper , spices , orange rind and hot sauce . Bring to the boil , and then reduce heat to simmer , uncovered , for 15 minutes . Add beans and apples . Cook for 10 minutes , stirring occasionally . Serve over rice .
