Healthy Chicken Curry

Ingredients Method
½ kg mini chicken drum sticks 2 large onions, chopped Cholesterol free butter Salt and pepper 1 tomato

In a frying pan, heat butter, add onions and cook for 5 minutes. Add 5 pinches of salt and 2 pinches of pepper. When onion becomes transparent put chicken in and cover the pan for 10 minutes. When chicken becomes off white, put in tomato, leave for 5-6 minutes and stir. Leave on low heat for 15 minutes and stir a couple of times. Serve with rice or bread.
Spanish Turkey Hot Dish Dinner

500g ground turkey meat 1 cup chopped onion 2 garlic cloves, minced
400g can of no added salt whole tomatoes, chopped
Small can diced green chillies, drained
⅓ cup raisins ½ tsp. salt ½ tsp. pepper ½ tsp. cinnamon ¼ tsp. cloves ¼ tsp. allspice ¼ tsp. nutmeg ¼ tsp. orange rind ½ tsp. hot sauce
1 cup canned black beans, rinsed and drained
2 cups finely chopped apples 3 cups cooked brown rice

Cook turkey meat over medium heat until golden, stirring to crumble. Drain any juices and pat dry with paper towels and set aside. Wipe fats from pan and coat with cooking spray; place over medium heat until hot. Add onion and garlic; sauté 2 minutes or until tender. Return turkey meat to pan. Add tomatoes, green chillies, raisins, salt, pepper, spices, orange rind and hot sauce. Bring to the boil, and then reduce heat to simmer, uncovered, for 15 minutes. Add beans and apples. Cook for 10 minutes, stirring occasionally. Serve over rice.
