Dairy-free and Sugar-free Banana and Peanut Butter Ice Cream

4 ripe bananas 2 tbsp. of peanut butter

Peel bananas and slice into medium sized discs. Place sliced banana on a plate and place in the freezer for anywhere between 1-2 hours. In a food processor fitted with a steel blade, place the slices of banana and blend away. The consistency will first be crumbly, then gummy, and then, finally, creamy. Once creamy, add Peanut butter and blend until mixed through.
This Banana ice-cream is easy, super creamy and even tastier. It doesn’ t use any dairy or added sugar and you don’ t even need an ice cream churner! If you don’ t like peanut butter you can throw in any other low fat / low sugar spread or coconut shavings. If you have nut allergies throw in some cacao for a choc-banana flavour. You can even leave out the flavouring and have the best banana ice-cream you’ ve ever tasted!

1cup almond butter ⅓ cup maple syrup 1 egg 2 tbsp. butter 1 tsp. vanilla extract ⅓ cup cocoa powder ½ tsp. baking powder

Preheat the oven to 160 degrees. In a large bowl, whisk together the almond butter, syrup, egg, ghee, and vanilla. Stir in the cocoa powder and baking soda. Pour the batter into a 22cm baking pan. Bake for 20-23 minutes, until the brownie is done, but still soft in the middle.
