Raw Pad Thai

This salad is delicious!
Ingredients Method
Salad
2 zucchini, preferably spiralised into spaghetti
2 small carrots, spiralised into spaghetti
130g red cabbage, roughly chopped
60g baby corn, thinly sliced 1 red capsicum, thinly sliced
A handful of sugar snap or snow peas, thinly sliced
1 spring onion, thinly sliced Handful of bean shoots Handful of basil leaves Handful of coriander leaves Small handful of mint leavest Pad Thai Sauce 2-3 garlic cloves ¼-½ red chilli
2-3 tbsp. peeled and roughly chopped ginger
80g soaked cashews( soak for at least 1 hour and drain)
2 limes( juice and flesh)
30g maple syrup or coconut nectar or honey( roughly ¼ cup)
2-3 tbsp. tamari 50g olive oil( roughly ¼ cup) 50g water or coconut water ½ tsp. cayenne pepper Pinch of salt

Place all sauce ingredients in blender and blend until smooth. Massage sauce into salad ingredients until thoroughly coated. Enjoy!
