Raw Vegan Tamari Zoodles

Ingredients Method
1 medium zucchini ½ carrot 5-6 cherry tomatoes Fresh coriander Sesame seeds 1 ½ tbsp. sesame oil ¾ tbsp. tamari ½ lemon( juiced) ½ tbsp. honey

Create the zucchini noodles using a grater or spiraliser. Sprinkle with sea salt and set aside to drain. Next julienne the carrots, slice cherry tomatoes and chop up the coriander. In a large mixing bowl, add in the sesame oil, tamari, lemon juice and agave. Mix well with a whisk or fork. Squeeze excess water out of zucchini noodles and place into the bowl of dressing. Mix it up lightly with tongs. Add in the rest of the vegetables and mix well. Serve and garnish with sesame seeds and coriander.

Stir Fry Cauliflower

Enjoy a healthy stir fry cauliflower or any other veggies of your choice.
Ingredients Method
5 or 6 medium size florets of cauliflower
1 or 2 cloves of garlic 2 tbsp. olive oil 1 tsp. chilli flakes Salt to taste

Heat oil in a wok add garlic finely sliced then add chilli flakes throw in cauliflower and simmer for few minutes add ¼ cup of water to cook cauliflower through, and then simmer till water burns. Lastly, add salt to taste and serve.

Vegetable Strudel

Great as a luncheon dish or main meal with mashed potato and salad. You can add or substitute the vegetables if you wish. Enjoy!!

Melted butter 9 sheets filo pastry Sesame seeds for sprinkling 2 large carrots grated 1 stick celery chopped ½ capsicum( any colour or mixed) 3 spring onions chopped ½ cup frozen peas 2 tbsp. chopped parsley 200g tub cottage cheese

In a frypan sauté carrots, celery and capsicum in a small amount of oil for 3 minutes. Add spring onions, peas and parsley and sauté a couple of minutes. Remove from heat and allow to cool. When cool, add tub of cottage cheese, stir through with salt and pepper if desired. Melt butter and brush over each sheet of filo pastry. Spread vegetable filling along long side of pastry then roll up tucking in ends. Place on a large oven tray and brush top of roll with remaining melted butter and sprinkle with sesame seeds. Bake in a moderate oven at 180 degrees for approx. 30 minutes.
