our track record during the early years at La Posada de Alájar and started applying for building permits , grants and everything else needed . If you have ever been involved in a renovation project you will know what we mean , just remember we are in Andalucia . So here we are in 2008 with the bureaucracy wearing out our patience .
The good , the bad and the ugly .
We finally managed to open our doors in July 2011 . Those were jubilant moments . More than a decade later we can take stock of what has happened to us . The good and the bad , what has filled us with happiness and what has filled us with sorrow .
We have experienced such wonderful moments . Like celebrating our daughter ' s birthday every year in our privileged space . We have also attracted guests from all over the world . We have been visited from as far away as Australia , Canada and the United States . And of course , the loyalty of many of you who have returned to stay with us on several occasions . Some of you have even been here in each of the years we have been open .
Ángel ' s classes . Once a teacher always a teacher ! Our Iberico Ham School , Olive Oil Tasting , Cheese Tasting , guided hikes and Spanish classes . Angel loves the fact that everyone gets to take away a little more of the Sierra de Aracena .
Lucy ' s cooking . Starting with my mother-in-law ' s recipes and developing traditional recipes into my own distinctive meals . Providing gastronomic memories for our guests is immensely satisfying .

Our green credentials . We are the first accommodation provider in Andalucia to have been awarded the European Ecolabel , a standard of environmental excellence awarded to products and services that meet high environmental standards throughout their life cycle : from the extraction of raw materials , to production , distribution and disposal .
But as I say , we have not only had light during this time . We have also gone through some dark times that have tested us , not only as owners , but also as people . prar en medio del auge económico y encontramos la de Colón 12 , que daba a un gran terreno . Era ideal , en el borde del pueblo con pocos vecinos , pero a solo un par de minutos a pie de la plaza del pueblo . Estábamos convencidos y se cerró el trato . ¡ Nos felicitaron en el pueblo antes de que la tinta estuviera seca !
La casa era una ruina . Convertirla en el B & B de lujo y ecológico que soñábamos iba a ser un enorme proyecto de renovación . Nos iba a hacer falta más paciencia . Conseguimos el respaldo de los bancos gracias a nuestro historial durante los primeros años en La Posada de Alájar y comenzamos a solicitar permisos de construcción , subvenciones y todo lo demás que se necesita . Si alguna vez has estado involucrado en un proyecto de renovación sabrás a lo que nos referimos , solo recuerda que estamos en Andalucía . Así llegamos a 2008 con la burocracia agotando nuestra paciencia .
De lo bueno , lo malo y lo peor .
Finalmente logramos abrir nuestras puertas en julio de 2011 . Fueron momentos jubilosos . Más de una década después podemos hacer un balance de lo que nos ha pasado . Se relacionan sin solución de continuidad lo bueno y lo malo , lo que nos ha llenado de felicidad y lo que nos ha llenado de pesar .
Hemos vivido momentos maravillosos y estupendos . Como celebrar el cumpleaños de nuestra hija todos los años en nuestro espacio privilegiado . También atraer a huéspedes de todo el mundo . Nos han visitado desde lugares tan lejanos como Australia , Canadá y los Estados Unidos . Y por supuesto , la fidelidad de muchos de vosotros que habéis regresado a hospedaros con nosotros en varias ocasiones . Algunos incluso han estado aquí en cada uno de los años que hemos estado abiertos .
Las clases de Ángel . ¡ Una vez maestro , siempre maestro ! Nuestra Escuela de Jamón Ibérico , Cata de Aceite de Oliva , Cata de Quesos , caminatas guiadas y clases de español . A Ángel le encanta el hecho de que todos se lleven un poco más de la Sierra de Aracena .
La cocina de Lucy . Comenzando con las recetas de mi suegra y desarrollando recetas tradicionales en mis propias comidas distintivas . Proporcionar recuerdos gastronómicos para nuestros huéspedes es inmensamente satisfactorio .
