Should we be worried if any of these providers have problems or go bust?

I think you have to take the view that they are 'too big to fail', and assume that if there are problems they have a suitable BCP (Business Continuity Plan) in place. For example, Travelex going to pen and paper when their systems were hacked.

If the data is in the cloud, do we need to worry about anti-virus software and the like?

Oh yes. You will be accessing the data via your laptop or mobile device and this needs protection. It is your responsibility to make sure your anti-virus software is up to date, along with any device patches or updates. In addition, you should only access sensitive data using a Wi-Fi signal that is secure, such as your office or home and definitely not free places like Starbucks or the likes. Finally, remember not to open dubious emails, no matter how tempting they may be, and never, ever give your password to that nice person from IT or anyone else.
