86 » OpenRoad Driver P L AT E S FOOD OF THE FUTURE by Sherman Chan » It goes without saying that food is not simply a matter of sustenance. In fact, our lives often revolve around our next meal. Work, travel, family, and trends all influence what and where we eat, so it comes as no surprise that the latest food trends are followed closely. As food trends are often heavily influenced by larger global trends, it is clear why we are currently seeing a move towards food sustainability and a focus on food origins and waste-free cooking. With that in mind, check out the Top Ten food trends this year. 1 . A LT E R N AT I V E P R O T E I N S This one is going mainstream with products like Beyond Meat and the Impossible Burger available now in major grocery store chains. These options may not reduce calorie or fat intake, but at the very least, there are no animals involved in the production. The presumption is that these meatless options would only be appealing for vegans and vegetarians, yet even meat eaters are choosing the plant-based patties in burgers found at A&W, Tim Hortons and White Spot. It’s clear that meat-free options are becoming more than just a niche offering. 2. CANNABIS-INFUSED FOODS With the legalization of marijuana in Canada, one would think that legalized edibles would follow soon thereafter. Until that happens, you will still find manufacturers who are experimenting with infused oils and cookery. Examples include THC-infused gummies, hard candies and cookies. Potential health benefits, which have not been extensively studied, include pain relief and acne prevention. There are chefs who are boldly incorporating these products into their cuisine, with Vancouver-based Travis Peterson leading the charge. Known as The Nomad Cook, Peterson hosts private cannabis dinners across the country.
