Many historians claim the dish was invented in Britain, and it has reached the status of being considered a national dish. It definitely deserves a spot on any “British food” list. What Chinese food is in Vancouver, Indian food is in Britain. Arguably it’s “the best” outside of its origin, thanks to the influx of immigrants. Chicken Tikka Masala is more British than it is Indian, and it’s as easy to find as Butter Chicken in Vancouver, but Sula Indian Restaurant stands out. The dish contains roasted chunks of chicken tikka, a boneless chicken marinated in yogurt and spices, that is baked in a tandoor oven in a spicy, creamy, orange masala spice mix “curry.” Curry is simply the Indian word for sauce. There are many recipes for the dish, but generally the sauce is made from tomatoes, garlic, ginger, onions, cumin, coconut milk, yogurt, cream, chilies and other spices.
