DANIELA'S FAVORITE PALEO RECIPE THIS MONTH

Homemade Paleo Mayo!

An ingredient I must have on hand in the kitchen for making some of my favorite foods (i.e., chicken salad, tuna salad, dressing, and many different casseroles) is MAYO—yet, the store bought versions are not considered Paleo because of the type of oil they use! Do not be FOOLED by the Olive Oil Mayo either that they sell on the mayo aisle as it also contains Canola oil, soybean oil and other ‘vegetable’ oil’s, which are not Paleo friendly nor considered healthy. Not to mention, even if you are not into Paleo eating, homemade mayo is to die for---there is no comparison! You can likewise, easily add your own spin to it with any spice you can think of, which is great for us creative types!

WHAT YOU NEED:

•1 Cup Extra Light Tasting Olive Oil (NOT EXTRA VIRGIN OR IT

WILL NOT TASTE LIKE TRUE MAYO) or you can use Avocado Oil.

•1 Large Egg (preferably pasteurized)

•Juice from half a Lime, Lemon, or your favorite Vinegar

•Pinch of Salt (I use Himalayan Pink Salt for its mineral content)

•An immersion blender (I got mine for $19 at Wal-Mart)

•A glass jar with a wide enough top to fit the immersion blender

Optional or ‘Essential’ based on your taste ☺:

•Dijon Mustard (I used a version with horseradish, yum)

•Dill, oregano, garlic powder, or whatever seasoning(s) you like!

DIRECTIONS:

First, crack the egg in the jar. Now squeeze the lime/lemon in the jar or add a tablespoon of your favorite vinegar. Next, add your salt and chosen seasonings (I love Dill and some garlic powder---Italian seasonings work as well, or NONE if you wish!). Squeeze in a tad of Dijon mustard if you have it on hand! Then pour in one cup of your EXTRA LIGHT tasting olive oil or avocado oil if you fancy it (I’ve heard it’s really good). FINALLY, place your immersion blender in the bottom of the jar and press the button holding the jar in place for about 30 seconds! You will see the mayo form before your eyes!

NOTE: If you have to use a regular blender, it is absolutely essential that you pour the oil in ever so slowly and gradually after you turn on the blender---watch as the mayo forms!
