Designers of Maison Dellos created a simple, but effective
and full of allusions to the water world interior. A warm
golden wave of lamps leads from the entrance to the visual
dominant of the hall: a wall where carps splash in the glare
of light. The restaurant’s brand chef was Vlad Piskunov (the
chef of the Matryoshka restaurant, an expert in Russian
cuisine), his right hand and the new chef of Volny, Evgeny
Khakhalev. The “Waves” menu deliberately leaves the bias
in national cuisines, choosing the fish international as its
flagship. The quality of the products and the
scrupulousness of their preparation, combined with
experience and ingenuity, themselves add up to a
harmonious gastronomic equation. Fish comes to the
restaurant’s kitchen from all over the country. From the
northern rivers - omul, taimen, nelma, muksun, trout. The
Black Sea is represented by red mullet, horse mackerel,
