PHOODIE’S HEALTHY
CHOCOLATE FUDGE COOKIES
Food blogger Phoodie shares a yummy recipe for healthy biscuits.
I agree that healthy food needn’t taste terrible. I have proven this repeatedly with my salads and other recipes you’ll
find at www.phoodie.com.au, and these bikkies are another great example. They are free from butter, refined sugar,
dairy, and eggs; makin g them practically nothing except fudgey goodness! Enjoy!
Makes: approximately 12
What you’ll need
1 cup dates, pitted
1 cup roasted macadamias
1 heaped tablespoon cocoa
½ cup toasted coconut flakes
1 teaspoon ground cinnamon
Icing sugar, to dust (optional)
How to make them:
1. Preheat the oven to 180ºC.
2. Place all of the ingredients in a bowl and mix with a spoon.
3. Transfer to your food processor and blitz until very well combined. Note:
Be careful not to over-mix, as the more you mix the more the oil from the
macadamias comes out and this will make the mixture too wet.
4. Take golf ball-sized amounts of mixture and roll into balls. Flatten each
ball with your hands and place on a baking paper lined tray. Note: you may
wish to blot each cookie with a paper towel to remove any excess nut oil.

5. Bake for 10 to 12 minutes. Best results come from flipping the cookies
over after 5 or 6 minutes, as this ensures that they will not burn on the
base.
6. To achieve a hard exterior, allow to cool and ‘set’. The inside of the cookie
should be chewy and fudgey!
7. And... I like to dust them with icing sugar once cooled, but you want them
to be super healthy, then you don’t have to!
