PHOODIE’S CHEAT’S
SPANAKOPITA
You’ll be wowed by this simple-to-make recipe, which is one of food
blogger Phoodie’s all-time faves.
How to make them:
What you’ll need:
2 sheets of store-bought puff pastry
2 eggs
½ bag of baby spinach leaves
(around 2 or 3 large handfuls)
100g feta, Parmesan or tasty cheese (or
whatever cheese you love)
100g labne (or any other cheese that you like
– what matters in this recipe is just that you
use two types of cheese)
1. Preheat the oven to 180ºC.
2. Place one sheet of pastry on a baking paper lined tray.
3. In a bowl throw in the spinach, eggs and two types of cheese, then
mix with your (clean) hands (or one hand if, like me, you like to
cook while chatting on the phone).
4. Place the mixture on top of the pastry sheet, add the other pastry
sheet on top. With a fork press the edges together around the
whole pie.
5. Spray lightly with olive oil or brush lightly with melted butter.
Place in the oven and bake until dark golden and crispy
(approximately 20 to 30 minutes). Enjoy!
