KAT WEIHEN ARTICHOKE DIP www.facebook.com/thenourishingkitchen ( OH YUM ) Artichokes have been shown to improve digestive problems and help to significantly lower blood cholesterol levels. They are packed with antioxidants that help to boost the immune system and prevent cancer and heart disease. Veggie sticks with dip is a great mid-morning or afternoon snack and a great dinner party starter. Most supermarket dips contain ingredients, preservatives and additives to extend their shelf life. With just a few simple ingredients, you can make your own and know that it is jam packed with good stuff that will nourish your body and won’t leave you feeling so guilty about going in for more! What you’ll need: 1 cup artichokes in olive oil, drained 1 cup soaked cashews* 2 garlic cloves ½ cup water 2 tablespoons olive oil Pinch Himalayan salt Pinch chilli (optional) *To soak the raw cashews, place 1 cup in a bowl and cover with cold water. Leave overnight on bench top or in the fridge. How to make it: 1. Drain the artichokes and pat dry in paper towel. 2. Drain and rinse the soaked cashews, and place in a food processor along with the drained artichoke, garlic, water, olive oil and salt. 3. Blend until smooth. 4. If you like a bit of a bite or kick to your dips, add some chilli flakes. ( OH! MAGAZINE ) JUNE 2014 17
