CRANBERRY &
ALMOND BITES
Rena Patten shares this tasty and portable snack.
Makes: Approximately 24
How to make it:
1. Place almonds into a food processor and process until
finely chopped.
2. Add the cranberries, raisins, orange zest and coconut oil
and continue processing until the nuts and fruit are all
finely chopped and you have a slightly sticky mixture with a
little texture to it.
3. Transfer this mixture into a bowl and add the quinoa or
amaranth puffs. Mix all the ingredients together – your
hands are probably best for this. Press the mixture together
4. as you mix so that it holds firmly together.
5. Roll the mixture into bite size rounds or a size that best
6. suits you and refrigerate until set.
What you’ll need:
125g raw almonds with skin on
125g dried cranberries
90g golden raisins
1 teaspoon fresh orange zest
2 to 3 tablespoons organic raw
Coconut oil, melted
15g puffed quinoa or puffed amaranth
Note: Amaranth is an ancient grain that has
been around for centuries. Puffed amaranth is
used just as you would puffed quinoa and is
available at most health food stores.
7. Store in a covered container in the refrigerator for up to
three to four weeks.
